But Pavillon Gourmet is not a stand-alone brand: it is part of Groupe Pavillon, a family-owned company from the French Riviera that brings together three complementary businesses — Catering, Restaurants and Hotels.

Groupe Pavillon : a family-run caterer on the French Riviera
The story began in 1999, when Marc and Chantal Lavergne took over Pavillon Traiteur, an event catering company founded in 1990. With a background in business, they brought a culture of rigorous management and close client relationships that still runs through every brand in the Group today.
Their children, Fabrice and Virginie Lavergne, then took the helm. Together, they weathered the 2008 crisis and the 2020 crisis while holding to one goal: to remain a local, family-run business while becoming a leading name in event catering and gastronomy on the French Riviera. This journey shaped Groupe Pavillon as it stands today, organised into three divisions.
At the heart of it all is our production kitchen in Mouans-Sartoux, near Cannes. This is where the food for all our brands is prepared, to the same high standards of quality, whether for a gala dinner or hundreds of lunch bags for a conference.
The catering division: from private receptions to large professional events
Pavillon Traiteur, the benchmark in event catering since 1990
Pavillon Traiteur is the Group's founding company. Weddings, seminars, conferences, sporting and institutional events : it handles every format, from intimate receptions to large-scale operations, with seasonal Mediterranean cuisine.
In 2026, the company reached a new milestone with Pavillon Signature, its ultra-premium offering: signature dishes, tableware brought to the fore, staged service, and a dedicated venue-finding service for agencies, companies and MICE organisers. A new tasting room has also opened at our production site.
Pavillon des Chefs, a production kitchen on demand
Pavillon des Chefs meets a very specific need : international caterers and renowned chefs who, for an event on the French Riviera, want access to the Group's production kitchen on their own terms. One kitchen, many culinary signatures.
The restaurant division: pop-up restaurants at major events on the French Riviera
Every year, Groupe Pavillon designs and runs pop-up restaurants at the French Riviera's flagship events. It is demanding work: large crowds, short timeframes, technical and regulatory constraints, and always the same attention to the guest experience.
Pavillon Gourmet, catering for trade shows and conferences
This is where we come in. Pavillon Gourmet is the Group's event catering concept at the Palais des Festivals in Cannes and the Grimaldi Forum in Monaco :
Delivery to stand for exhibitors (coffee breaks, canapés, lunches, drinks and equipment);
Click & Collect to order online and pick up your meal without queuing;
Full Catering Package, with a kitchen brigade and service staff directly on your stand;
Meal trays and lunch bags delivered to offices or homes, from Nice to Monaco via Cannes.

Le Masters, Le Skippers and Le Panoramique
Le Masters comes to life every April during the Rolex Monte-Carlo Masters.
Le Skippers sets up at Port Canto during the Cannes Yachting Festival in September.
Le Panoramique, a bistronomy-style restaurant, welcomes visitors to the same festival on the Old Port of Cannes.
L'Orangeraie and the Food Truck
The division also includes a permanent restaurant, L'Orangeraie, with a Provençal touch, located at La Bastide de Tourtour, as well as an event food truck that travels across the French Riviera for private and corporate receptions.
The hotel division: three distinctive addresses in Provence
Early on, the Lavergne family set their sights beyond catering alone. Groupe Pavillon is also a hotelier, with three properties in the Var.
La Bastide de Tourtour, 4-star hotel & spa
La Bastide de Tourtour is a 23-room, 4-star spa hotel set in a 4-hectare park in the village of Tourtour. It is ideal for a stay in Provence, a seminar in the countryside, or a few extra days after a conference on the French Riviera.
Villa du Saignadou
Villa du Saignadou is a 180 m2 Provençal stone house with a private pool and tennis court, designed for stays with family or friends for up to 10 guests.
Les Terraces de Figanières
Les Terrasses de Figanières is a residence of twelve apartments with a swimming pool, open all year round, between the Gorges du Verdon and the Gulf of Saint-Tropez.
